Orexa orzo with salmon

Ingredients

500g salmon
2 Tbsp olive oil
1/2 c. diced yellow onion
4 garlic cloves, minced
400g canBasil, Garlic & Oregano diced tomatoes
3 1/2 c. chicken broth
1 1/2 c. Orexa orzo
1 tsp salt
1/2 tsp pepper
1 tsp Italian Seasoning
1/2 c. shredded Parmesan cheese
2 Tbsp chopped Parsley


In a large skillet over medium heat olive oil. Saute onions 3 minutes until translucent. Add garlic and saute 30 seconds or until fragrant.
Add OREXA orzo to skillet and stir to coat. Saute about one minute. Stir in tomatoes, seasoning with basil and chicken broth. Bring to a boil, reduce heat and simmer 8 minutes, stirring occasionally.
Stir in Parmesan cheese.
Season salmon with salt and pepper. Nestle salmon pieces into orzo. Cover skillet and simmer 8-10 minutes or until salmon is cooked through and pasta is al dente.
Remove lid from skillet and simmer to reduce broth is there is extra.
Garnish with fresh parsley and serve.
