Orexa macaroni with chicken

Ingredients

3 shallots, peeled and chopped
1 teaspoon vegetable oil
230g chicken breast, cooked, deboned, julienned
120g sun-dried tomatoes, sliced
1/2 cup heavy cream
1penne OREXA pasta, cooked
1 1/2 teaspoon butter
OR
2 tablespoons vegetable oil
2 tablespoons Parmesan cheese, grated
1 teaspoon fresh basil, julienned


Saute shallots in oil for 2 minutes or until soft.
Add chicken and tomatoes and cook over moderate heat for 5 minutes.
Add cream and cook, stirring occasionally, for 5 minutes.
Add remaining ingredients and toss to combine.
Serve immediately.
